Summer School of Sensory Analysis Put Students' Sensory Skills to the Test

From 22 to 26 June 2026, the Faculty of Agriculture and Technology of the University of South Bohemia in České Budějovice hosted the international Summer School of Sensory Analysis Test your senses! The programme welcomed 13 students from Romania, Slovenia and Türkiye, including participants from Adana Alparslan Türkeş University of Science and Technology.

The summer school began with presentations by FAT USB Ph.D. students on the cultural heritage of the Czech Republic, followed by an introduction to sensory analysis. During practical laboratory sessions, participants tested their ability to recognise tastes, aromas and food textures while becoming familiar with sensory evaluation methods commonly used in the food industry.

The programme also included a workshop on the history and present of the Czech dairy industry, led by Ing. Jiří Kopáček, CSc., Chairman of the Czech-Moravian Dairy Association. Students learned about traditional Czech cheeses and evaluated their sensory characteristics.

Another part of the programme focused on beer quality assessment using a sensory kit designed to identify common beer faults. The academic programme was complemented by an excursion to the historic town of Český Krumlov, a UNESCO World Heritage Site.

On the final day, students presented the cultural heritage of their home regions, introduced traditional food products protected under the European quality schemes (PDO, PGI and TSG), and shared examples of their national cuisines. The programme concluded with a sensory evaluation of dairy products prepared by FAT USB Ph.D. students and a certificate award ceremony.
